Yesterday i bought a second corned beef brisket. It's a fantastic price for beef.


I also bought several jugs of juice and fresh fruit.


Then I went straight to the liquor store and bought vodka.


I absolutely NEED vodka to make a nice fruit hooch.


If I do not have some vodka to drink then I will start drinking my hooch within 7 days or less.


I will start drinking my hooch way way before it has time to finish fermenting and become something decent.


It's embarrassing. I'm very very immature about it.


Anyways, I will be using my Red Star Premier Cuvee yeast -- a strain of the “saccharomyces bayanus” yeast.


That's the same yeast strain as Lalvin EC-1118.


EC-1118 is the most famous 'fast fermenting' yeast and is capable of producing a wine that is 18% alcohol by volume.

I'd argue that "Turbo Yeast" is infamous as opposed to famous.

I will say "yes."

"Unintentional" and "Accidental" are both easier than easy because they don't require that anyone have a thought -- let alone actual effort, let alone actually doing anything.

Anyways, i bought a jug of freshly pressed apple juice. And then i forgot about it.

And then it started fermenting on it's own without me adding wine yeast to it. The apple juice wasn't pasteurized. So any wild air born yeast were not killed. Evidently there was wild air born yeast still in the apple juice. And it went about doing it's business.


The result was wonderful!!! :)

But it was too wonderful. Meaning that i enjoyed it too much. It was much stronger than i expected it to be.

My gosh!! :) it was more than a pleasant surprise! :) I was feeling no pain!!

but i didn't take any pictures of it nor document anything.

Meaning that i didn't take pictures nor document it. So it woulda been a great addition to the Motherless "HomeMade Booze" group.

But i failed. I confessed that i failed.

Having said that, I just got back from the grocery store. And i carefully selected purchases of chicken, sausage, vegetables, etc.

A warm ferment with "the beast"

One fellow hoocher referrred to ec-1118 champagne yeast as "the beast." And aptly so.

The stuff is simply TOO good. It's a wine yeast that is crazy aggressive.

Hoochers love it cause it makes a strong alchohol drink very quickly. Strong booze very quickly.

But skilled wine and cider makers tend to avoid it. Cause whatever kind of fruit flavor that you start with will most likely get stripped away very quickly.

I'm doing a warm ferment with the wonderfully cheap apple juice from walmart. And i'm using the infamous EC-1118 champage yeast.

It's been fermenting for one day.

So i just added a little more sugar to it.

And then this happened:
